    Just breaking a hog and been told smoked jowl is good. I can’t find any references on how to clean it. It looks like it is all glands. Do you leave all that on or clean it off? What’s the norm?

    mars here’s the photo of my jowl. Is my knife pointing at glands? Do you leave them in or trim them out? From the suggested video I gather it’s better to leave them in.F7B69E25-9000-4190-96DA-2D30C4F70C61.jpeg

        mars well they are out of the smoker! How do they look guys? They look edible I’ll have to test it out at lunch!!! The one I’m point at I think is the same from the raw picture???

                Jonathon yes I removed all the free standing ones but that honeycomb stuff that I’m pointing at in the picture is still on ,that’s as far as I trimmed it. From multiple YouTube videos it seems to stay on???

                    Sorry about being absent and of no help. I opened this thread but felt too bad to post anything. A trip to the Dr. has got me back among the living.
                    I didn’t have any of that on my jowls so I just trimmed things up and then rubbed in the cure really good.

                                    mars you could also try the urban butcher channel. Just watched a video on boning the pigs head where he shows trimming up the jowls

                                      While we’re on the jowl bacon kick my uncle was a stickler for Jowl Bacon & cabbage for his New Years Day dinner. It has always been promoted as a traditional New Years Day meal. The area groceries promoted it as such by placing special prices on jowl. My uncle would buy every piece of jowl on the shelf Of a local store and we had a feast.
                                      I never knew how or why pork became a New Years Day meal but a recent search on the internet provided one very interesting theory.
                                      It goes something like this. Chicken & Turkey scratch backwards but a hog uses his snout to root going forward. That’s the way you should start the New Year “going forward” interesting to say the least. Good enough reason for me to enjoy a nice jowl bacon & cabbage meal with family & friends.

                                        I always trim the glands out (gray squishy stuff) like the previous guy said Eckkehard the German Butcher doesn’t! https://youtu.be/Zmh0ZEZvM0U Here’s is jowl trimming video! I prefer jowls to slab bacon personally!
