Due too many allergies we do simple to cook then individual sauce. Salt, pepper, roasted garlic, Then we use Mauls bbq from St. Louis MO. And hubby uses three depending on how he feels. Worchester, A1, Me I actually enjoy plain I love the flavor of fresh grilled steak.

@herbcofood I only had the meat in foil pan for a few minutes while grinding, everything else was in plastic or lug [image: 1640011480773-20211218_204919.jpg]

@chippewa said in Buckboard bacon: @mrobisr I stand corrected. I did some investigating and you are correct. I found a copycat recipe for the Tenderquick without the nitrates. I will try next time. I just hate to change!!! Took me many years of trial and error to get it the way we like it. Wasn’t trying to be rude, just looking out for you brother. I promise it will not change the flavor at all. Now ask me how I know…been there and done that, yep I did the very same thing. Add correct amount of cure then whatever the difference is in weight between TQ and cure amount add plain salt to make up the recipe.

@calldoctoday I probably talk to my brother tomorrow and get his recipe. I have to catch him at home. He is suppose to be retired but took on contract work from a former contractor who worked for him and begged him to repair some IT and computer problems that he only seems to know how to repair.
