    mrobisr I stand corrected. I did some investigating and you are correct. I found a copycat recipe for the Tenderquick without the nitrates. I will try next time. I just hate to change!!! Took me many years of trial and error to get it the way we like it.

    mrobisr yes that is true. But in your article it says blends are safe to use. And that is all I am saying about the subject. Thanks for pointing it out.

    mrobisr I read the article and it says the tenderquick is fine as long as directions are followed. It does say not to use just nitrates though.

    I made another batch of peppered buckboard bacon.

    Roughly 12 #
    I used the top halves of 2 Boston butts with the fat caps. Also smoked the bones for bean soup.
    Brined for 7 days with a tenderquick ,maple sugar and brown sugar blend
    Cold smoked at 125* for around 5 hours
    Let sit a couple days then mostly froze and sliced.
    Came out great!!!

    I have standard dial calipers Trying to find the best balance of stuff ability and fitting on the tube. My Hakka tubes are way to small and just to big.

    I have a 15 # Hakka stuffer and want to use the 13mm Waltons tube to make 19mm snack sticks. The Hakka tube has a 2” OD at the base and just wanted to make sure the Waltons one was the same size.
