John Belvedere What a view, I read you better be on the lookout for the sharks up that way, they are on the warpath. Down this way too though, they about bit a young lady’s leg off just trying to get some scallops for dinner…

Home meat processing shopDeepwoodsbutcher Thank you, I really appreciate that. I have been thinking of building a processing house for years & that might help, although I would like a freezer section too perhaps. I would probably consider a typical exterior finish to stay in context with the house, lots of air circulation, plenty of Styrofoam type insulation, probably epoxy painted concrete slab on grade for the floor, & RFPs (Marlite) for the wall & ceiling finishes. Then though I wonder if after all that, I would just be better trying to find a good used walk in that someone is moving out. I have heard there are good deals to be found out there if you are patient & ready. Thanks again, I really appreciate it.

Kansas Tourism: The Smoke ShowJonathon If you like that one, you will like “Single in Havana”. That is one we found on a run several months back to South Florida to do some inspections. I should have taken a photo of it for you. I will check & see if I have a bottle stashed away some where.

Kansas Tourism: The Smoke ShowHerbcoFood I had never tried that one before, how long have they been there in Crockett? Wade Elkins, that name rings a bell, but I cannot place it.

SourdoughDave in AZ That looks wonderful. I am going to have to get Andrew started on some of that sour dough. Did you say you had a started recipe?

Home meat processing shopDeepwoodsbutcher I am impressed. You are able to get enough cooling & freezing with just the window A/C? I need to learn more about all that.

What did everyone cook today?twilliams Sunflower has one of the most wonderful flavors, but is also more on the expensive side. It used to be more expensive than peanut, so I only bought it in very small batches when I was looking for lots of flavor.
-
What did everyone cook today?Jonathon Used to use nothing but Peanut for deep frying, even when they said it was high. However, they have taken it to a new level this year & I just flat out cannot afford it. So, trying different things, I tried Soy Bean, which actually has a pretty high smoke point (higher than Peanut) & it has been working well. I don’t think it lasts as long & survives as many filtering & reuse operations (which someone (A fishing guide that I used to really like a lot, but he had to finally give it up with all the new laws, etc. & move to Alaska) said actually led to oils not being so good) as the Peanut does, but the taste has worked out pretty good & doesn’t burn for our limited fries these days. It is 1/4th cost in bulk compared to Peanut.

What did everyone cook today?twilliams It looks like you already made the show, those look fantastic & that is where the fireworks are.
We have been getting monsooned every day here now something serious. I feel like we must be living in India, across the Big Water. -
What did everyone cook today?Deepwoodsbutcher You are very welcome.

What did everyone cook today?Tex_77 Little T-Bones & Taters, that is really nice. Just did some dry bones (St. Louis & Spare ribs), home made pepper bean salad (I really wonder if I should process those to get the flavor out instead of vacuum marinate), baked beans (just deuced up canned with sautéed onions & peppers from the garden this round) , & some of Andy’s bread. Too busy serving folks arriving, etc. & forgot to photos, but the ribs were real good, perfect. Those perfect sized little T-Bones & taters look satisfying though.

What did everyone cook today?Deepwoodsbutcher That looks really good & healthy too.

Passing of a True Patriotbocephus That is pretty amazing as I have known a few, most that have passed, that would not touch anything made in Japan or Japan sounding after that experience. Others, that had no issue at all. I think we have come a long way.
