Hi, new member since I ordered some Waltons snack stick 16mm casing and willies spice mix last week!
Live in AZ, been using my Traegar for 8 yrs, for jerky, brisket, pork butts etc. Just got into sausage making early Jan22. But have probably read 4000 pages now lol… Read Marianski books on Home Production of Quality Meats and Sausages; and Art of Making Fermented Sausages, both twice now.
I’ve got a
- 1HP grinder from Meat! Or [link removed], not sure what they really go by. Looks the same as Wilton and close to Cabelas.
- Also have their 20lb mixer, which is 100% same as Waltons, both are made by same Chinese mfg, just branded different.
- 15 lb sausage stuffer from Meat!
- Older Traeger large pellet grill, works great but can’t hold lower temps for long
Will be posting lots of questions on good smoker units, need to purchase one!
