I want to give a huge shout out to the farmers. They don’t get holidays off. They don’t get sick days. They don’t get vacations. 24 hours a day 365. I did this profession for 10 years. They give the ultimate sacrifice!!

calldoctoday I’m planning on making some gumbo this weekend as well. Thinking chicken, sausage, and shrimp.

        What kind are you making?

Chef Well, I started out just going to do my Middle of the Winter Gumbo in what feels like the middle of the Summer. However, Margaret really wanted some seafood in it. The problem is two fold though, first finding wild, preferably domestic seafood, the second problem is affording it. I finally found some wild Gulf shrimp & crabs I could find a way to afford along with some wild Louisiana Crawdads, & at least some wild oysters to add to the mix “Gumbo”. Of course I am also one of those that believe Gumbo does not exist without Okra, which was the reason for the need to make Gumbo to start with. I know you will enjoy yours. Dave

Chef This one and many others on this site totally agree with you. Actually, I haven’t heard one negative statement on this subject. So, until then. It’s 100%.

cdavis kyle, You guys don’t work too hard now. We will be right there with you with an inspection in the morning before a day or two of report writing (while trying to make Gumbo at the same time) & then hit the road for Natchez, MS, Port Allen & Opelousas, LA for a few more inspections before heading back to write reports.

Hopefully the access to everything & roadways will not be too bad in MS & LA with the storm having come through some of the area. Don’t work too hard over the weekend, enjoy as much of it as you can.
