Question on Seasoning Pack Additives

    There are lots of discussion threads about additives like binders and cure accelerators, and preservatives that people are putting in with their sausage recipes.

    A question I have for Jonathon and Austin: is there a way to know what kind of additives (those other than the flavorings) that are included in the pre-blended seasoning packs from Excaliber or other seasoning vendors?

    Are there any legal labeling requirements on the non-flavoring ingredients in seasoning packs?

    processhead It would also be nice to know what the % of salt is added to the mix.

      Pivodog I like that idea, that way it may be an easier calculation if you know you should have a certain percentage of salt for a cured sausage as opposed to a fresh one

      Jonathan do you know if there’s a certain percentage of salt that’s supposed to be in a cured product or is it seasoning based? I’d imagine chemically speaking a certain percentage is required for good protein extraction, ect…

        My interest in salt % is mainly to cut down on salt content to what I like. So, I tend to just make up my own from using known recipes or experimenting.

          Pivodog We’ve asked if Excalibur could give more details about salt and sugar content in their blends, but they seem to be pretty tight-lipped when it comes to that sort of thing. Unfortunate.

            Yes, it is unfortunate but totally understandable.
            Proprietary seasoning formulations is what gives a company like Excalibur a competitive edge.

            Granted, everyone has salt and sugar in their seasonings.

              processhead I know trade secrets are valuable. I dealt with them a lot in a former life.

              I get it when it comes to how much and what other seasonings you might add to a blend, but I don’t particularly abide by keeping salt and sugar content secret. Even Coca-Cola discloses that.

                  TexLaw That’s why I pretty much stay away from packaged seasonings. Also, you can learn a lot more when creating your own…

                          There are special labeling rules for blended seasonings that are different for “food” items like cake mix.
