    processhead when looking at the product on Walton’s website scroll down and click on additional info, and it will show a list of the ingredients, and/or what other additives are needed to make the product.

    Thanks Tex_77. I had seen the ingredient list before and of the products I checked, they all showed flavoring ingredients, but no non flavoring additives.

    It just left me wondering if that ingredient list was all-inclusive, or if other additives might be included in the formula but not shown.

      processhead I think that is really going to be based on the product. The more special flavor it is, the more likely to additives. If you look at the cured sausage seasonings, all most all of them list various additives. If there is something that needs to be added that is not contained within the seasoning I’m sure it will be listed on the instructions or included with the purchase. I know when I purchased the German sausage seasoning, it shipped with sure cure, even though I was going to make a fresh sausage out of it and didn’t need the cure.

        Those are the ones that leaves you with many bags of extra cure lol but it’s nice if you decide you want to go make a cured sausage with a fresh sausage seasoning at some point

          There are lots of discussion threads about additives like binders and cure accelerators, and preservatives that people are putting in with their sausage recipes.

          A question I have for Jonathon and Austin: is there a way to know what kind of additives (those other than the flavorings) that are included in the pre-blended seasoning packs from Excaliber or other seasoning vendors?

          Are there any legal labeling requirements on the non-flavoring ingredients in seasoning packs?

            Pivodog I like that idea, that way it may be an easier calculation if you know you should have a certain percentage of salt for a cured sausage as opposed to a fresh one

            Jonathan do you know if there’s a certain percentage of salt that’s supposed to be in a cured product or is it seasoning based? I’d imagine chemically speaking a certain percentage is required for good protein extraction, ect…

              My interest in salt % is mainly to cut down on salt content to what I like. So, I tend to just make up my own from using known recipes or experimenting.

                Pivodog We’ve asked if Excalibur could give more details about salt and sugar content in their blends, but they seem to be pretty tight-lipped when it comes to that sort of thing. Unfortunate.

                    processhead I know trade secrets are valuable. I dealt with them a lot in a former life.

                    I get it when it comes to how much and what other seasonings you might add to a blend, but I don’t particularly abide by keeping salt and sugar content secret. Even Coca-Cola discloses that.

                        TexLaw That’s why I pretty much stay away from packaged seasonings. Also, you can learn a lot more when creating your own…

                                There are special labeling rules for blended seasonings that are different for “food” items like cake mix.

                                This explains a little about how the FDA rules work. http://otmenu.com/labeling-spices-in-ingredient-statements/#:~:text=The FDA’s criteria for,flavoring principle has been removed.
