Induction Cooking
-
We have a portable one at work that we use for various things. They work well, you just have to make sure the pots/pans you are using are compatible. There are some high-end brands such as Thermador that sell full size cooktops that the entire surface of the cooktop can be used for induction.

PapaSop I think the cooktop will be great for water bath finishing

Our house has been using induction kitchen top for many years. It’s fast to heat and great temp control. Yes only skillets and pots that a magnetic can stick to work on these. The good old cast iron are great. Still having trouble finding a good pressure cooker that will work on it though.

PapaSop did you ever get one? I’m needing to replace a couple of portable heat sources, and thinking of going induction.

I’ve looked at portable induction cooktops as a solution for when I want that extra burner. It just seems perfect for that. Relatively small and light, and the Amazon one is something like $60.
tarp Unless you are looking for something a good deal larger, you’re best bet on a pressure cooker is an Instant Pot or similar electric pressure cooker. I was a little skeptical of the Instant Pot at first, but I’ve been sold on it for some time.

I just use my 6 burner gas stove. This is a very interesting conversation though.

Have not. Looked at one again last weekend but didn’t like the price. Local store. I know I can get one online but like to shop local if possible. They’ll run a sale sooner or later. -

I see a big difference between restaurant supply shops and on line like eBay - as much as 6 to 8 times,
would like a recommendation from a reliable source - like even both the orange and the blue team…
