bocephus agreed, its that or temps are too high during the cook. It also helps to make sure you are using fresh and firm jalapenos. I made a batch that half of the peppers sat a few days before I got to them and the other half were just off of the vine. There was a big difference in the firmness of the final product.

The cowboy candy juice is great in wilted/sautéed greens.

I like them with cream cheese rolled up in a tortilla.

lkrfletcher my batch from last year never mellowed. They are great tasting, but my Jalapenos were the hottest I’ve ever grown. This year they are a nice medium heat. I gifted a lot of last years to some friends who liked crazy hot.

Dr_Pain im down to one jar now. The longer they are in the jar, the better they get.
