lkrfletcher my batch from last year never mellowed. They are great tasting, but my Jalapenos were the hottest I’ve ever grown. This year they are a nice medium heat. I gifted a lot of last years to some friends who liked crazy hot.20210816_204908.jpg

        • 1/2 tsp Turmeric
        • 1/2 tsp celery seed
        • 3 tsp granulated garlic
        • 1 tsp cayenne pepper

        • Slice 1/8" to 1/4" rings and set aside
        • Bring to a boil vinegar, sugar, turmeric, celery seed, garlic and cayenne pepper.
        • Reduce and simmer 5 minutes.
        • Add in the pepper rings and simmer exactly 4 minutes (stir them to coat rings)
        • Remove pepper rings into jars

        • Ladle over slices
        • Remove air from jars
        • Clean jar edges and seal

bocephus agreed, its that or temps are too high during the cook. It also helps to make sure you are using fresh and firm jalapenos. I made a batch that half of the peppers sat a few days before I got to them and the other half were just off of the vine. There was a big difference in the firmness of the final product.

The cowboy candy juice is great in wilted/sautéed greens.

Dr_Pain im down to one jar now. The longer they are in the jar, the better they get.
