Well, I’ve been naughty because I BBQ or processing and have not documented. I beg for your forgiveness, please forgive me.

Well, carp! I lost all of my comment when I went back to look up @Bob Stehlik Thanks to Bob I decided to use my original rub on the other item that is not shown. It is the other half of the brisket point corned beef that I show. Hopefully I’ll have a pic of the flat turned into pastrami after tomorrow. It is in the fridge now, hopefully slice it up tomorrow.
I made another batch of bacon for those that wanted it, I’m up to 115 lbs so far this year and I have another whole Berkshire pork bellie to do in the next week or so, (I get to keep half! Yeepie!!)
Lets see, I fermented 2 half gallon jars of kraut that netted me at least 6 quarts.
Smoked 5 dozen of 2 part chicken wings that I brined and seasoned 3 different ways. plus a pint of chicken hearts in a butter seasoning. I found the wings @ Sam’s club last weekend for $2/lb. Lowest I’ve seen in a couple of years by far! AND they are a larger size to boot! 2 bucks for wings to me is still pricey! However as they have been lately, I’ll take that for the win, Alex.
Oh ya and the one ton pizza Denny O’s style.
I hope to try to post a little more often but I’m very busy for a semi retired construction man. Heck I don’t even have my maders in the loving Mother earth yet!

Thanks to all of you chefs! I am blessed by your forgiveness.
We are having to go waterbed mattress shopping once again, seems to think I like sleeping in a wet area. LOL!
Replaced 5 - 3’x5’ windows in my 105 year old home and now need to trim both IS and OS.
Customer has called me out because she wanted lighting on the rear of the property, then a couple of days later had a mainline plumbing issue.
I’m rigging a new to boat and it is at the top shop now(geez I think he is a bit slow) and I still do not have it propped correctly.
A neighbor with 2nd floor window sill replacements, 2 clients with decks to rehab, one to start over with. ANd another lady that wants me to gut her kitchen and dinning room and start all over.Sheesh! I need to sell all my tools to be able to say NO!I’m going on 68 this year and I’m getting less done each day.
At least I can tell you the water is blue and the grass is green! Sorry for the rant. I’m 10-7 now. -

Kraut is 4 weeks. bacon is about 3 weeks plus. wings over night, pizza 3/4 of a day because I make my own dough, cure my canadian bacon and mix and grind my own hamburger. I just can’t seem to get a handle on raising them portabella mushrooms as of yet! ;<) -

April 30th I had family over, 31.5 to be exact (we found out a niece was expecting). We were going to have everything outside but Mother Nature would not cooperate. Living room dining room and kitchen maybe 650 sqft. 3 racks baby back ribs, 14lb prime whole packer brisket, 9# pork butt shredded, 4bags course sliced cole slaw mix with my dressing, 1/2 steamer pan of Denny O’s Sweet Heat smoked beans and 10lbs deviled egg potato salad. Then a $140 gluten free 1/2 sheet double decker birthday cake for the 2 grands. and 2 cheese cakes!
