Best advice I can give you is to make a panade (white bread mashed with milk to a paste) and add it to your ground beef. Will prevent them from getting hard/dry when cooked.

I want to make meatballs tonight. I have never had a good recipe for meatballs or meatloaf. You guys have not steered me wrong yet. What do you have for recipes?

I am probably a little late for you to try tonight, but this is my favorite meat loaf. It’s out of a local cookbook our public tv station puts out.

hey vegetarians, my food poops on your food!

This is the MEATLOAF RECIPE that I use. It is pretty classic meatloaf like my mon used to make. Take the time to make the glaze on top. It is really good.

Both meatloaf recipes look good, I use wild rice in Brats. My younger sister found some one time and they were my Dad’s favorite, so I started making them for him and liked them myself. Thanks for the recipes.

bocephus Thanks for opening up my mind to “why not add rice to the sausage mixture?” Have not had a good european rice sausage in a long time. Thanks for re-energizing the possibilities. Have a good rest of your day.

kyle This sounds like it would make great meatballs also, reduce the cooking time,

zbigjeff I put wild rice in brats and my summer sausage. Add high temp cheddar and craisins with the wild rice and thats what I call WI brats or WI summer.

kyle I think pork or sausage would be good added to the meatballs or meatloaf. I often make meatloaf or meatballs with 50/50 beef to venison sausage.
