    Ed Paone I did 10 pounds of deer sticks with the Walton’s 11lb stuffer recently and had no issues with blowby.

          GWG8541 nice looking sticks. Do you smoke them on the jerkey racks or do you just use them for drying. I have some of those and have never used them. Might have to dig them out

            kyle I have to smoke them on the jerky racks. I do not have a vertical smoker or hanging space.

                    GWG8541 I always lay mine on the smoker rack but you got me thinking I could double the space in my smoker doing that. Plus for drying them that would work better than having cookie sheets spread all over the kitchen. Thanks

                      kyle yes sir. I smoke them, put them in the sous vide, then after the ice bath, back on the racks to dry overnight in the fridge.

                        First time posts so bear with me.

                        I have an LEM 11 lb. stuffer which has worked well for 15years. My only complaint
                        is it came with a 5/8” stuffing tube which doesn’t allow me to slide the 21mm casings
                        on. I have to feed it onto the tube. I had a new piston gasket and purchased the Walton’s
                        13mm tube. When stuffing sticks the meat blows past the piston gasket. I reached
                        out to LEM and they were no help. So I thought about purchasing a new stuffer.
                        I was on the Walton’s web site looking at the 11-pound stuffer and noticed it came with a
                        13mm tube so I called to speak to a product specialist to see if they had any problems
                        with the meat blowing by the piston gasket. Unfortunately they do not and suggested
                        I reach out to the Meatgistics community for answers. So does anyone use this
                        stuffer or had this problem stuffing stick? I don’t mind purchasing a new stuffer if
                        it solves the problem. Thanks

                        Ed Paone I use the lem 11lb. stuffer and make a lot of smack sticks with a 19mm stuffing tube and hope this will help.
                        1: Make sure the gasket in put on the right way.
                        2: How much water are you adding to your mix? I use 2 oz. per LB. of meat.
                        I have adapted the stuffing tubes that work an a Kitchenaid mixer and they work very well for both 19mm casings and 21 mm casings like for brats.

                              Got a question while we are on the subject, (sorry for a slight derail to the OP.)
                              When we speak of the diameter of the stuffing tube, Is it the OD or the ID in mm or inches?

                              I ask because the casings are in ID I believe for the casing, but when you get down to a 17mm tube I thought it was in ID. SO are we using dimensions in ID or OD for which, the tube or the casing???

                              I’m just looking for a clarification, not my last rodeo and I’m still steering my last red meat into the corral and down the shoot!!

                                Ed Paone All I can speak of is the Walton’s 11# stuffer and it has stuffed everything from 19mm collagen to 22mm sheep casings to 5" fiber and has never failed to produce outstanding results.

                                  Denny O I’m not sure but I do know the 19mm casing is a struggle to get on my cabelas 12.7mm OD tube. I’m not sure if they are saying my tube is a 12mm or 13mm. I’m assuming a 13mm. With the Walton’s 11lb stuffer tube the 19mm slides right on with ease. So I’m assuming that is a true 12mm OD diameter
