Sure. Just to clarify, his grinder is badged with a Tor-Rey label. As I understand it, they are now marketed as Pro-cut.

smokinbubba Yeah we could do something on that for a livestream, I’ve got one in our commercial test kitchen and it seems like people are getting more interested in them.

processhead I paid $1100.00 for it from a local used restaurant equipment store. It was pretty dirty when I got it. I ended up taking apart the bottom plate to remove all of the old crap and polished it up. It looks really nice now. I also replaced the blades and locking collar and nut. I’ve been mainly making frankfurters with it along with a loaf of Leberkasse.

Pivodog What did you use to polish your chopper up? It looks really good.

When I got the bowl chopper, I took it apart and scrubbed it down with simple green to get rid of the old food and grease stuck on to it and then used a little bit of aluminum polish to shine it up. After that, I washed it down and sanitized it with Clorox and water.

I think some of these machines with the cast aluminum housings probably were factory polished with a fine wire wheel buffer and then clear coated to seal the surface. I know on mine, there are areas where it looks like the coating has worn through from repeated cleaning and general wear and tear.
