    Some Italian med hot I made last month with sweet onions and green peppers. And a nice coleslaw with apple cider vinegar and a bit of ginger.

    And I know this isn’t the drinking thread, but it is 80 F here in Phoenix, so I’m eating this lunch out on the patio with a Bud Lime, and I’m not ashamed! 😉

      Ended up with a small butt after cutting off what I needed for sausage batch. Some oil, salt/pepper/garlic and roasted in the oven. So amazing and simple.

          Well, here is phase II of St. Paddy Day with an idea that I thought would look much better, but still tastes greatReuben Wrap, Re-Sized.jpg This is a Reuben Wrap. I know, I am going to have to work on the presentation, which was not good, trying to squeeze this in for everyone today for a lunch, between inspections & reports. It was very tasty though, with a light crunch (not just the pickle either) on the outside of the Tomato-Basil Tortilla, with the same delicious inside of Homemade Pastrami, Sauerkraut, & Spicy Russian Dressing with lots of Swiss Cheese. They hit the spot & were easy to eat.

              Dinner. I call this “HamBone soup” because it sounded better to my kids when young than split Pea soup 😉 I had 4 or 5 smoked Aitch bones from pork butts with some meat on them, I smoke and freeze then use to make soup.

              Instant Pot really cooks the gel out of these in 60 min or so for awesome stock. Bones, water, split peas, onion, celery, carrots, cajun salt blend like Tony Cherecheres or Zatarains.

                    Chicken fried steak, mashed red potato’s, homemade pepper gravy and corn. I think I ate to much and am paying for it now, but it was good. IMG_0326.JPG

                        Yeah just seems each time they go on sale it is either used for Pulled Pork or Sausage. You forget how good they are roasted in oven to slice.

                        I also make them often by marinating a day or two in mojo criollo then browning and braising with a ton of onions and more mojo criolla as the liquid. Once done throw under broiler to crisp the fat cap. Amazing and cheap as can be for a meal.

                                calldoctoday That’s a great answer. Just got home from night of cocktails in the huge town of El Dorado, AR. First round of golf tomorrow. It’s a test of the new hip and bad knee. Tes, I’m laughing. We will see how it goes.
