Making some progress today. I have the new bearing in the motor and the motor runs nice and quiet now like it should.
Next up I need to address a bad seal in the gearbox that runs the bowl. The oil level was low when I got the machine and there was evidence underneath that oil was getting past the seal on the input drive shaft to the gear box.
Seal should be here Monday. While I have it torn apart, it will get a couple of bearings. I need to turn a bushing that goes on the sheave clutch. Still under $60 total in parts so I consider that a win.
I am impressed by the build quality of these Hobart machines. All the subassemblies are constructed with heavy duty milled and machined parts.
They were designed to log thousands of hours, then be rebuilt and do it all over again.

I hope to find out soon. My old chopper had a 14 inch bowl. This one is 18 inches.
I found that for best results I had to keep the 14 inch chopper bowl at less than itβs physical capacity of meat or it would slow down and not give a good emulsion. The sweet spot was a little over 2 lbs so for large sausage batches it would take multiple chopper batch runs.
The specified capacity is just the volume of the bowl. That doesnβt tell you very much about the actual capacity since that depends on what it is you are chopping. You can probably chop a lot more cabbage than you can ground pork butts, if you see what I mean.

My wife needed some ground fresh pork today to make wontons for soup so I used that for an excuse to try out the new grinder/ chopper. Although the grinder is the same size No.12 head as my old one, it now has about three times the horsepower driving it and seems to run at higher RPM.
I ran about 3 lbs of semifrozen pork through a 3/16 plate and was done in about a minute.
I set aside a 1 lb of the ground pork for my wifeβs project and put the remaining 2 lbs in the bowl chopper with some water and a small amount of left over breakfast sausage season I had on hand.
I ran the chopper about 5 minutes, adding a small amount of additional water. It did a great job of emulsifying all the ingredients and would work equally well for bologna or fine ground wieners . I will have to do another test run to see what the maximum batch size will be. The two lbs of meat came nowhere close to the capacity of the bowl.
