Put up a small batch of summer sausage today.
50/50 venison and pork with jalapeño and cheese.
Temps got a little high right at the end put it didn’t effect it much. I got lucky and caught it quick enough.

Looks great. I made a half batch of the habanero bbq summer sausage. I used the sure gel as a binder, and used cheddar cheese. Looks great. I made a half batch of the habanero bbq summer sausage. I used the sure gel as a binder, and used cheddar cheese. On point! 20172094-9C76-420B-A17F-FD6C11D95C61.jpeg 798B920B-500E-40BD-8C6B-B9644EE9A99A.jpeg 23EF1F2B-D03F-4CC8-826D-E5C730B7EDF8.jpeg 8287D31D-53F7-47E6-BD39-FFE34225C72A.jpeg 2249B548-C928-4331-9F15-613BBD54367A.jpeg BA3C8DBD-0516-46D5-A030-6E5EE76F4E93.jpeg 77B42562-7E54-44C6-B600-5041B38462DD.jpeg

Put up a small batch of summer sausage today.
50/50 venison and pork with jalapeño and cheese.
Temps got a little high right at the end put it didn’t effect it much. I got lucky and caught it quick enough.

YooperDog it does have some nice heat, but its not overpowering by any means. guys at worked loved it. Also, adding the high temp cheddar tamed the heat very well. great flavor.
