    Can snack stick seasoning be used for smoked sausage in bigger casings? I want to use the BBQ smoked stick seasoning for smoked sausage. I assume I would follow the same smoking times and temp and still use cure.

        holley Yup, the only difference would be the diameter of the sausage, other than that, smoked, snack sticks and summer sausages are pretty much the same process. You might notice a slightly higher salt content, but nothing that would be obvious or negatively affect the taste.

          holley Yup, the only difference would be the diameter of the sausage, other than that, smoked, snack sticks and summer sausages are pretty much the same process. You might notice a slightly higher salt content, but nothing that would be obvious or negatively affect the taste.

                kyle What a World it would be! Of course then it could turn out like a lot of other things too. I was once asked if I would like to be a fishing & hunting guide a long, long time ago. It was very intriguing & appealing, but I said no. They thought I was crazy & kind of stayed on it for a while. I felt like if I did it to make a dollar, it would take all the joy out of it & turn it into work. That was my reasoning then & to some degree it still applies. I enjoy what I do, a lot, don’t get me wrong. But, it can turn into work at times, but I still go at it regularly, so good thing I enjoy it.

                    calldoctoday Funny you say that I grew up thinking I wanted to be a pro fisherman and entered one tournament and the pressure was on and it turned my beloved time of relaxation into a high pressure job, no thank you. I even quite watching the tournaments on tv it just takes the fun out it for me. Now I fish for men, but that is another story.

                        Biggest difference between snack sticks and summer sausage is the ratio of the main meat to a filler meat to me. S sausage I use a combo of meats, the sticks I’m more pure main meat. The fat might also be leaner in the sticks too.

                            mrobisr Exactly. I am with you 110%. My brother did the circuit for years with all the schedules, rushing from here to there, etc. It looked like a whole lot of work & stress to me & not much fun.
