    Here locally people get together and have a tamale making party as it helps a lot to have multiple hands involved. last year we did one and made all pork some with spice some not. It is lots of work, but yummy

      I remembered the name of the company that makes the frozen tamales I buy. Texas Tamales, they have a website at texastamale.com

        We have a great place east of the mountains that we go to we we are over there. It beats having to make the tamales myself, it’s a two day job to do them right. They are award winners too. http://www.loshernandeztamales.com/

          Who’s making Tamales for Christmas.

          What types of Tamales are you making ?

          In Southeast Texas, tamales are the go to item for a Christmas Meal. It is one of my biggest selling items for Christmas.

          I’ll be making:
          Pork
          Chicken
          Beef
          Black Bean
          Smoked Brisket.

          Would love to hear from other areas of the country.

          Chef Well, it sounds like you built one heck of a following. Tamales are popular in those “southern” states and can’t figure out why it’s not that way all over the USA. When I traveled (been to every state), there’s only about 6 where I could locate them. Have fun with it and make that profit.

            zbigjeff Funny you say something like that, my buddy recently moved from Houston to Austin, which is about 140 miles apart. We just so happened to talk about Tex-Mex. He was telling me in Austin there is more of a central Mexico style there. You really have to search for traditional Tex-Mex. Also Austin is only 90 miles from San Antonio and just about every where you turn is Tex-Mex.

              HerbcoFood My buddies groan when I travel to the Houston area and want to get some TexMex. I get it at least one day out of the week I’m down there because they are always looking for food outside of the TexMex arena. Sometimes, they even let me get my way 2 days out of the week. I just smile.

                zbigjeff Houston is a melting pot of cultures from all over the world. But someone who groans about getting Tex-Mex is uncalled for! Next time you’re down let me know and Ill throw some places you can try, also depending on the area of town you’re in.

                      Chef In Illinois we have Chicago. I’d like to see the state capital moved from Springfield to Chicago because that is where the state is actually run from. Then everything south of I-80 annexed to Iowa, Missouri, Indiana and Kentucky.

                              HerbcoFood It does have a great food truck scene, but supporting that scene is against my believes. I only support what is within my value systems.

                              People must stand up for what they believe.

                              This is why I only support companies that represent my value system. If a company supports agendas that I do not believe in, then I don’t shop them.

                                    Chef how do you know when you are thinking about trying something new if they have the same belief system you do? Is it one of those situations until it’s fine until they tell you otherwise, or do you assume the worst until they prove themselves?

                                      Chef I totally agree. Haven’t been to Starbucks or Target in a number of years and some other food locations that I can’t think of right now. Plus, I really don’t care what people think about me saying NO. I just don’t any attitude that “excludes”. Period.

                                        I’m sure that some sill evade me, but I do the best I can. Companies like Coke, Disney, Home Depot, … and the list goes one.

                                        I try to spend wisely with companies that share my value system and avoid companies that support an agenda that disapprove of.

                                        I never assume the worse. I just don’t assume people are of a like value system. I just like to be informed.

                                          Chef Fair enough. Obviously larger companies there’s lots of info out there. I was thinking more along the lines of smaller, mom and pop places that you may come across while traveling, etc. It’s something that I don’t know how to find out, and wasn’t sure your strategy for these types of places.
