      This project took several days overall but it was worth it. I started with a batch of ghost chili cheddar beer cheese sauce a couple days ago. Last night I made a small rib roast that had been taking up too much freezer space for way too long and started on a bread project. This morning I got to work on some footlong hoagie rolls, picked some bell peppers from my folks garden and grabbed some local onions from the store. I spent the afternoon shaping, resting and baking the bread. After all was said and done I spent about 2 minutes inhaling one of the best sandwiches I’ve ever eaten. Philly has nothing on me.

        How about a little Smoked Chicken, marinated in South American marinate before smoking a then smothering with a some sautéed peppers, onions, & apples. Man, that is good!South American Smoked Chicken Breasts Smothered in Onion, Pepper, Apple Medley, Resized.jpg

                  craigrice Yes, you are right. It was weird on this one. To attach the photos I had to do the written part & then immediately edit it & attach the photo. Something was going on, but got it to work pretty quickly.

                    Jonesy Glad you could find some perch. The people on the east side of Cleveland say they are minimal at best.

                      Jonesy That looks like some good eating. I can’t believe you were able to get them to the platter to take a photo before they disappeared. Where are those Walleye?

                        Five pounds of medium cheddar smoking away. Using my A-maze-n smoker tray in the Treager and have the cheese in the cold chamber. Using cherry pellets for a softer smoke flavor. Will do five pounds of sharp cheddar tomorrow. Next will be vacuum sealing and putting away for Christmas presents if I can leave them alone long enough. IMG_0221.JPG

                              johnsbrewhouse Ya know, the same people who said to me: I don’t like smoked cheese, asked me why I didn’t bring more to a gathering. They then told me not to look at them that way. Yep, all you guys have opened a very good door to pure happiness. Keep it up.

                                          Back from camping and back to reality. I enjoyed some great food with the family the past several days. I’ve included some pictures if my contributions to the family meals.
                                          This past weekend was the State Park Campground’s Halloween weekend camp out. It has been a family and friends tradition of ours for about 4 decades. My brother, one of my sisters, my family and some old friends were part of it this years.
                                          We took up 5 campsites and a cabin. Unfortunately this weekend the Crappie were not cooperating, so no good fish pics. I will start with Friday’s meal, which were all over wood fire.
                                          Breakfast, yes that is Spam and eggs with toast. Its a long story, but has become part of the tradition.

                                          Lunch was deer brats I made using Walton’s Blue Ribbon brat seasoning and adding some of my ground homemade Chipotle for a little kick.

                                          Dinner was a Hunter’s Pie made in my CI Dutch Oven using 5lbs of ground venison.

                                          Saturday we call the big breakfast. My brother and I get up and start it at sun up. The menu was bacon, sausage with gravy, biscuits, country ham, pancakes. The plate was mine after cooking all morning on the griddle.

                                          Saturday dinner is pot luck. My contribution was ND Mike Chocolate Cherry dump cake and every bit disappeared. I had to improvise a little after leaving my Hershey’s Special dark chocolate chips at home. I had the big pack of Hershey bars for Smores and chopped up 4 bars instead. I also added Dr. Pepper Cherry instead of Coke. It was awesome.

                                          GWG8541 Looks like a great time. Just got back from a 8 day trip to Amana Colonies in IA for Oktoberfest. Had four campers this year. Didn’t do much cooking with so much great German food and beer available. Amazing how a little camping with family and friends can refresh the soul. Camper is now winterized and put away for the winter (just in time, supposed to freeze tomorrow). Time to start making next year’s reservations. Thanks for sharing the amazing food pics. ND Mike cake is always a hit.
