@dennyo I’d have to see her recipe to get it all. But I helped her cut up beets carrots cucumbers jalapeños bell peppers celery and tomatoes. I’m not sure what else went in but this is the 5th year she’s made it and I like it better than the real spicy V8.

Tex_77 I bet my wife wishes I would pull mine up. The plants look rough but still producing like crazy. But it’ll end before too long. Then I’ll have to talk her into green tomato relish.

Tex_77 we couldn’t find ball lids so had to use another kind. Do you know what caused this during the hot water bath. 7 out of the 36 did this. 20210907_113236.jpg

cdavis I wonder if its a combo of cheaply made lids and not enough head space left in the jar.

Gotta believe that with the number of years of canning that Mrs Davis has under her belt, it has to be plainly the lids.

@dennyo just so my meals keep coming I agreed with her that it was the lids. These lids are much thinner than ball lids and they just look cheap. I think maybe the rings needed to be a little loser.

I’ve always firm grip tighten the lids not loosely snuged down.

Yeah looks very similar. Have used these for a while now. They work great in my opinion. There is a glass disc in there right on top of shredded cabbage. I like the idea of using a full leaf to keep it all submerged. Will try that next batch.

cdavis Usually either too full or boiled too hard when processing, another thing could be rings were too tight initially.

I have bought the seals online and they did not preform as well as the name brand and were used in the same process as the others

cdavis I’ve been asking some folks who have been canning longer than I’ve been alive and none of them has seen a lid act like that. At first I was thinking there may not have been enough air gap at top and the tomatoes bubbled or expanded a little during the bath, but from your pics, there seems to be plenty of air on top. It sounds like a defective lid.

GWG8541 your right the head space was good. I think the lids are junk but that is all we could get. Maybe she had the rings a little tight. She was in the process of redoing them when I left for work this evening. I’ll know the verdict when I get home in the morning. Thanks for your input.

RON PARRISH well we found out that it is the lids. She had to redo 13 of the 36 quarts. Being careful not to put the rings on too tight still had 3 lids do the same thing. She’s frustrated but on the bright side I have 3 quarts of spicy v8 in the fridge that I have to consume before it goes bad.

Does anyone here can potatoes? We had a good crop this year and was thinking about trying it. I found a recipe in the ball book, but would like to know if people do it and how they turn out.
