    zbigjeff Stir Harder, Harder. Seriously, I met a lady about 20 years ago or so when down in Louisiana on assignment & she did the same thing. I also found some quarts one time of that store bought roux, Mrs. Savoy’s & such. I had to kid a few folks about that. They said it was good though. I have heard the oven trick works real well, but I still feel obligated somehow to get it to that deep, dark Mahogany in the pot. Old habits are hard to break.

      zbigjeff & before long, someone may come up with an even better method to everything that trumps them all. That is the process.

            Smoked/grilled some chicken thighs on my PK360. Seasoned them up Lawry’s Total Seasoning and |Oakridge-BBQ-Smokey-Chile-Lime Seasoning then shredded them up for chicken tacos.

              Tex_77 , A far a I am concerned they can throw out the breast meat on a chicken. I could eat thighs, wings, necks and legs for the rest of my days.

                processhead I have always enjoyed the short-legs the most. Plenty of meat that is juicy, flavorful, & tender. Used to be cheap too! Now a whole lot of folks have figured that out just like a few other things.

                    zbigjeff Excellent Question! You rarely run into anyone these days & for some time that know what it is. However, I grew up hearing short-leg & rarely if ever at all hearing thigh, so it stuck. So, that is it, the short-leg I suppose is an old version of a thigh. I believe also that if you cut the rest of the leg (drum-stick)off , you will end up with a short-leg. Having said that, I have also heard some folks refer to the chicken leg quarter as a short leg, but that has always been simply a leg quarter to me. I suppose, thigh is really easier to say, but there again, short leg just stuck & old habits are hard to break.

                      calldoctoday So, thigh it is and I agree that it’s my goto. Juiciest part and you’re correct that it USED to be the second most reasonable besides the feet. It’s creeping right up there in price. Thanks for the explanation and expanding my vocab.

                        The secret is out how good thighs really are and some talented cooks are figuring out new ways to prepare them. Too bad, I was happier when they were kind of unknown and looked down on. Kept the price reasonable.

                        I think a lot of health conscious folks stay away from dark meat for some reason, and associate boneless, skinless chicken breast as the only chicken option.
                        Too bad for them, IMO.
