GWG8541 They are a pain to can but well worth it!Garden is wearing me out.Had to make 14 quarts of tomato juice last night because I wont be home all weekend and was afraid they wouldnt last.I also have about 1/2 bushel of bananna peppers and not sure what to do with them.Any ideas anyone?
RON PARRISH I give alot away. I can my banana peppers, I’ve never froze banana peppers, but I do freeze bell and jalapenos after dicing them up and packaging in to various amounts for recipes, I vac pack them and freeze for later used in chili and any other dish calling for them.

GWG8541 I never thought of freezing jalapenos, have canned a lot of them and use in recipes. This year I will try and freeze some. Living in NM we freeze green chile all the time (roasted and peeled). Usually do three gunny sacks a year, should have never taking some to other family members. LOL

RON PARRISH we always pickle them when there’s an abundance of them. Just opened the last jar from last year. Time to do it again.

I’m looking forward to experimenting and tuning to our palette.

The tomatoes just keep coming!

-
are you going to dehydrate any of them ?
-
craigrice hmm hadn’t planned to. What would I use them for?
-
Tex_77 Looks like a good start to a pot of spaghetti sauce.
-
Tex_77 there are some recipes that call for them and they can like other things be rehydrated
-
Canned up some salsa today and I’ll have more to do tomorrow!

Tex_77 Gorgeous, send some down my way. Our tomatoes are all washed up now, too hot & too humid. Hopefully I will be able to prune them back some more & revive them for the Fall. Pepper are doing wonderful though.
