    Chef in the video john did two Canadian bacons one had a pepper rub on the outside do you think that some type of brown sugar / maple seasoning, cure would give you the end results

    craigrice I don’t think a cure would give me the same product. The brown sugar and black pepper becomes a thicker coating on the outside of the bacon.

      craigrice You’re very correct on the number of new items to try when I’m up and ready to go. Prioritizing will be just as difficult as sitting on the sidelines and seeing all this in front of me.

        Bob Stehlik Update: Felt strong and sturdy enough to try my car for the 1st time since 6-13. No issues getting in or out. Things are looking up.

          zbigjeff Did you have to make an emergency run to the liquor store? LOL Glad to hear that your mobility is getting better by the day. Pretty soon the wife will have you out there cutting the lawn & hoeing the garden!

                Bob Stehlik No emergency YET. Just finished a Knob Creek Very Small Batch Bourbon 100 proof last night after my 2nd grandson was born by a midwife in Indiana yesterday. With the number of bottles in my arsenal, an emergency would not occur for at least another 3 months. I stocked up extremely well for the planned isolation.

                      Chef Re Hip Issue & total hip replacement: what happened was that I didn’t sit on my butt much in the last X years. The hip degradation was caused by officiating over 3,000 soccer games at many levels, playing a bunch of golf and a sundry of other activities throughout my life. I’m now paying the price. Just have to take a break for awhile during the healing process whether I like it or not. Btw: thanks for asking. Yep, reading about all the neat things all of you are doing is inspiring me to get back on that treadmill of life.

                        Chef Re Hip Issue & total hip replacement: what happened was that I didn’t sit on my butt much in the last X years.                           Chef Thank you chef. The rehab is only as good/hard if one follows it. The most difficult item is only doing the rehab they demand vs doing “extra”. They probably know a bit more than I about the whole process and the reasons. Yep, following their instructions exactly and steady as she goes.

                              johnsbrewhouse Thank you. It’s all about baby steps and accepting that it’s OK on the rehab part. Re the new grandson: My daughter is a strong person. She delivered the grandson at HOME with a midwife a la natural. Yep, she’s a brave one she is.

                                zbigjeff she must be strong and brave. The only women I know that still use a midwife are the Amish in my area. Congrats to you both 👏.

                                      processhead Thanks for your understanding of the process and the support. Since I desire to get back to a positive result, I plan to go through each step as designed. It’s just like following all the basics in cooking, smoking and stuffing.
