    I would only use the seasoning amount for only the amount of hamburger us plan to use. All the other meat is already seasoned. Maybe mix the hamburger and seasoning together and let it set overnight then mix all of the other meats with it. Just a thought.

    That is what I was questioning to myself last night. I think you are right. I should mix just the burger with the pizza mix. Cook the burger and sausage separate, let it cool, then mix them together with the pepperoni and mozzarella for my stuffing.

        Made sausage all day Saturday along with the pizza beef and Italian sausage and planned to attempt the pizza bierocks on Sunday. We ended up with rain and cool temps most of the day Sunday. I was afraid my dough would’t rise so I held off. I keep my house 66 degrees year round so I have to set the dough outside to rise. So today is the day. Have my dough made and is proofing now. about 10 minutes to go on first proof. Got my pizza beef, Italian sausage, pepperoni, and mozzarella mixed.

            I recently made my first ever bierocks from scratch and they were amazing.
            Now I want to try a pizza bierocks. My plan is to use supreme pizza brat seasoning, 50/50 hamburger, mild Italian sausage. Hard pepperoni chunks and high temp mozzarella cheese.

            Question is, how much supreme pizza seasoning do you think I should use? Full amount as recommended on bag, a little more or a little less?

              So they ended up turning out OK. They were more like pizza sliders. In my opinion, to much flavor to stuff into a little package. I had quite a bit of meat mixture left over so decided to try again with bigger pieces. I basically ended up making calzones and they turned out outstanding. I guess it just needed a bigger package to shine because the flavor in the calzone is much more balanced instead of all at once in your face like the bierock size. I would definitely do it again as a calzone.

                  So they ended up turning out OK. They were more like pizza sliders. In my opinion, to much flavor to stuff into a little package. I had quite a bit of meat mixture left over so decided to try again with bigger pieces. I basically ended up making calzones and they turned out outstanding. I guess it just needed a bigger package to shine because the flavor in the calzone is much more balanced instead of all at once in your face like the bierock size. I would definitely do it again as a calzone.
