Stuffer Tube Compatibilities

Hello Everyone,
I have a LEM BIG BITE DUAL GEAR 10 LB. SAUSAGE STUFFER and want to make smaller Snack Stix. The smallest horn LEM makes for that stuffer is 16mm or 5/8".
Does anyone know if you can use the Walton’s horns, specifically the Walton’s 10mm SS Stuffing Tube: SKU: 670866 , on my LEM Stuffer?
@cpscholz that would be my concern also. You take the chance of bending the oring stuffer plate or shaft. There is no easy fix for that. If you use 100g of chilled water per kg of batch it should flow easily. If you’re struggling to stuff. Don’t stuff. Add more water within reason.

Measure the end that connects to the stuffer on one of your tubes, if that is the same size as waltons it should fit. One concern is how your stuffer will handle the pressure caused by using the smaller tube, it could cause problems at the o-ring on your stuffer.

Yeah, someone in customer service should be able to give you the diameter of the [censored] on the Walton funnel. Even if the Walton funnel was larger than the LEM, it wouldn’t be too difficult to grind the edge down to match the LEM [censored] size.

CENSOREDprocesshead I think the end to the stuffer on waltons is 2 1/8". Can’t say fla@nge, you get censored, lol. I agree if the difference is not too much you could grind the waltons tube.

I would have real reservations about a 1/4 tube on manual stuffer and can’t picture being able to push any thing thicker than water through one. I have a 3/8 O.D tube and gave up on using it.
It just requires too much effort.My go to stuffer funnel for snack sticks in a sheep casing is a 1/2 inch O.D. tube and it still gives you a work out.
A 5/8 inch funnel will work, but if you are using collagen casings, it will require a fairly large one just to fit over it. May bump your sticks up to a size a little large than is typical for a snack stick.
Here is a chart from the Walton’s collage casing page showing the casing size limits for various funnel sizes.
A 5/8 funnel is 16mm. That limits you to a 26mm casing which would be right at 1 inch diameter for the filled casing. That’s a pretty fat snack stick.

processhead great chart and I assume it is listed as od. Will have to measure my LEM 5lb stuffer horns one may be 3/8 od for snack sticks. Cheers

I use the 3/8” for 16 mm most of the time. You have to manually feed the casing onto a 3/8” tube as it won’t slide on while they are compressed in a strand. My 5 pound stuffer handles the 3/8” pretty easy.

I have a Hakka 15lb stuffer and the 12mm Walton tube fits perfectly. Not exactly what you asked but they look to be fairly similar.
I will add that I did 25lb jalapeno/hi-temp cheddar sticks and it too massive effort to stuff with 12mm tube and 19mm casings. I did only use 1qt water and had sure-gel in it so next time will increase the water but based on that experience I’d reconsider the 10mm tube. I grabbed 21mm casings and am hoping they fit over a 16mm tube for next time. -
