Any help appreciated.I’m not going out to buy a micrometer for 1 use</p>

I am so sorry. I gave you the incorrect information. 100ml of water= 100grams by weight. It was totally an oversight on my part. When I do a batch of 1kg I add 100grams water by weight. I make no excuse. Just oversight.  Here is one of typical recipes  converted fm Chef’s 60lbs:</p>

More precise and easier to work with when your scaling recipes.  I follow the mixer instructions. If you wait too long after the mix it will turn into cement…    Very hard to stuff.  Just for facts:  Most commercially processed meats / Deli have as much as 50% water batched in.  That $10 a pound deli ham cold cut is $5 water / $5 meat .  That’s why it turns slimy after a few days. As a note, smaller stuffers with smaller pistons with handle the smaller tubes much better than larger diameter piston stuffers will.</p>

Much appreciated!  With your information and what I received from Walton’s Customer Service (Thanks Lori!), here’s what I learned.  My LEM tubes measure 2 11/64" in diameter.  That’s 3/64th" larger in diameter larger than Walton’s tubes.  That’s 3/128th" on each side of the (part that cannot be named- that’s funny!) f<em>l</em>a<em>n</em>g*e, which is miniscule, and probably within manufacturing tolerances.  Therefore, I’m going to order the 10mm and 12mm Walton’s tubes and give it a go!</p>
