Hard Willie's Snack Stick Seasoning.
-
I am getting ready for a batch of snack sticks. I bought Willie’s a few months ago and only used a portion. I vacuum sealed put in my box in the closet. Yesterday went to get out all I needed and found the snack stick seasoning hard. Is this still good and can I just throw it into like a Magic Bullet and grind it to the best original state I can get to.

sbtech Ive had the same issue. I dissolved it in the water i was adding to the meat mixture.

I agree that it’s probably just fine. I’ve had other rubs and blends do that.
I’ve used a meat pounder to bust it up.

Pound it down. No worries. -
Definitely still ok, when I seal my stuff I don’t draw a full vacuum to prevent this and haven’t ever had an issue… seasonings won’t go bad per say even after their 2 year shelf life usually just lose potency so after that time could see a flavor difference
-
Put it in the microwave for 10-15 seconds and should soften up.
-
Not uncommon.
When this happens to us we put it in a bowl and use a fork to break it up into smaller chunks. Measure out your water that you plan on using in your meat block and add however much of it is needed to dissolve what chunks are left. Letting it sit for an hour or two also really helps.Once dissolved add it to the meat, then put the balance of the water in the bowl to essentially wash out any remaining spice and add it to the meat block as well.

If you do have an old spice lying around that you suspect has lost it’s punch simply cut back on the meat a tad and you will never know the difference.

sbtech Do you live in a humid environment? I used to keep all the moisture collectors out of my pills. Put unused cures in a wooden box I built along with the moisture collectors … never had a problem!

Dan Vesel If I see it is losing it punch will give your suggestion a try. Thank s

Some of our blends come in either 10# or 50# Bulk and are not sealed and fade pretty quick so Depending on how much it’s lost 2-3# off a 25# Meat Block will usually do it. -
bobbetty2 I live at the ocean so moisture is a problem. I have tried many things but nothing has worked yet.

they sell moisture absorb packets here also
