Do you vacuum pack your snack sticks?
-
A good point was brought up in my last thread regarding a moisture problem, and I think its worth asking.
How many people vacuum pack their snack sticks?
USMCPaul I vacuum seal all my snack sticks, minus the ones I eat before they’re all dried off after the ice bath! Lol

USMCPaul every single one of them, looks more appealing and keeps them fresher in the freezer, my question is why wouldnt one vacuum seal?

Vacuum sealing isn’t perfect but IMO the benefits far outweigh the negatives for long term storage at freezer temperatures. Now if you were to consume them, or give them away, within a month or so, you could probably look at something like a sealed jar or other container and just store them at refrigerator temperatures.

Waltons has awesome sealer bags at 2.5"x10" I love to use for individual sticks that people love getting! They even have a tear strip for easy opening!

The operative here is what happens to the food after vacpac. If i vacpac sausage and don’t immediately freeze the vac will start to wick the juice out of the sausage. When i defrost a vacpac i always break the seal for the same reason. Never saw a vacpac snack stick or sausage in the market place. protective bagged or shrink wrapped… yes. Just my thoughts. . . . Just what i do. This by no means challenges the benefits or reason for vacpaking.

Never had an issue with wicking moisture out of the sticks even after an extended drying period. Nor have I had an issue with the seal breaking during a defrost??
Haven’t had a store bought stick in years… Can’t answer to that.

PapaSop I break the seal when defrosting. This is to purge the vac on the meat and stop the juices’ from being sucked out. Vac a steak and refrigerate for a few days. The blood will be pulled out of the meat.
