What did everyone cook today?

Tex_77 that gumbo really looks good so does your jerky. I did a batch of tex mex jerky in the smoker.  still can’t figure out this picture thing.
Just finished up snow plowing and jumped right into making dinner. Venison loin steaks, fried onions and mushrooms, broccoli florets and wild rice pilaf. Steaks turned out medium rare to medium, broke out the cast iron.

Looks great, Yooper! And nice serving vessels, we use similar (my wife is a Michigan Pole).
Venison burgers on cast iron for us.

YooperDog Nice. My wife is from Zilwaukee, the knockoff Milwaukee (not kidding). Been buying her a piece every Mother’s Day.

First pork shoulder on the Traeger, penzey’s galena rub - quite tasty - just need to make sure the hopper is full of pellets.

Made 150# of sausage today. We made Hatch Green Chili, Philly Cheese Steak, Supreme Pizza, Blue Ribbon, H-110C, and 1504. On the Philly and Supreme we did a 3 cheese blend with Walton’s high temp cheddar, swiss and mozzarella. We used tubed natural casings as well as fresh collagen. Of course you can see I was representing for @Team Blue and rocking the Walton’s leather apron. We also used Walton’s 11# stuffer. I had the to post the photos separately for some reason…probably Team Orange trying to keep the man down.
