Mrs. TL's Soon to be World Famous Banana Chocolate Chip Muffins

My wife has made two batches of these in the last week after we discovered bananas lurking in the freezer. I had to share the recipe. They just seem to evaporate.
-1 1/2 C whole wheat flour
-1/2 C wheat bran
-1/2 C packed brown sugar
-1 tsp baking powder
-3/4 tsp baking soda
-1/2 tsp salt
-2 eggs, lightly beaten
-1/4 C milk
-1 1/3 C mashed ripe banana (2 or 3 medium) (overripe even better)
-1/3 C unsweetened applesauce
-1 tsp vanilla extract
-1/2 C semi-sweet chocolate chips (we usually use Guittard or Ghiradelli)- In a large bowl, combine 1st 7 ingredients.
- In a separate bowl, combine eggs, milk, bananas, applesauce and vanilla
- Stir into dry ingredients until just moistened.
- Fold in Chocolate chips.
- Spray muffin cups with cooking spray or use paper liners (paper liners are the way to go).
- Fill each cup 3/4 full with batter.
- Bake at 375 for 18-22 min or until toothpick in center comes out clean.
- Cool 5 min before removing from pan.

TexLaw My wife is a freak for baking, she loves trying new things. Her current muffin is blueberry with brown sugar which are amazing but she needs to try this!

Jonathon They don’t last long around here at all. We sometimes buy bananas just to let them go overripe to make these muffins.
Let the banana peels get so dark that you can barely look at them. Overripe is the way to go here.
