<?xml version="1.0" encoding="UTF-8"?><rss xmlns:dc="http://purl.org/dc/elements/1.1/" xmlns:content="http://purl.org/rss/1.0/modules/content/" xmlns:atom="http://www.w3.org/2005/Atom" version="2.0"><channel><title><![CDATA[Mrs. TL's Soon to be World Famous Banana Chocolate Chip Muffins]]></title><description><![CDATA[<p dir="auto">My wife has made two batches of these in the last week after we discovered bananas lurking in the freezer.  I had to share the recipe. They just seem to evaporate.</p>
<p dir="auto">-1 1/2 C whole wheat flour<br />
-1/2 C wheat bran<br />
-1/2 C packed brown sugar<br />
-1 tsp baking powder<br />
-3/4 tsp baking soda<br />
-1/2 tsp salt<br />
-2 eggs, lightly beaten<br />
-1/4 C milk<br />
-1 1/3 C mashed ripe banana (2 or 3 medium) (overripe even better)<br />
-1/3 C unsweetened applesauce<br />
-1 tsp vanilla extract<br />
-1/2 C semi-sweet chocolate chips (we usually use Guittard or Ghiradelli)</p>
<ol>
<li>In a large bowl, combine 1st 7 ingredients.</li>
<li>In a separate bowl, combine eggs, milk, bananas, applesauce and vanilla</li>
<li>Stir into dry ingredients until just moistened.</li>
<li>Fold in Chocolate chips.</li>
<li>Spray muffin cups with cooking spray or use paper liners (paper liners are the way to go).</li>
<li>Fill each cup 3/4 full with batter.</li>
<li>Bake at 375 for 18-22 min or until toothpick in center comes out clean.</li>
<li>Cool 5 min before removing from pan.</li>

We sometimes buy bananas just to let them go overripe to make these muffins.</p>
<p dir="auto">Let the banana peels get so dark that you can barely look at them.  Overripe is the way to go here.</p>
