          Denny A boning knife. I use a Victorinox.

            Denny I use a paring knife. Always worth investing in a good quality knife. I use Wusthof, but I use my knifes daily on a professional basis. There are many good brand, including the Victorknox that Tex_77 suggest.

                Denny I use a 8” fillet knife that I usually for fish and it works great for taking the silver skin off.

                    On a different note, I haven’t been able to find any brand of lump charcoal anywhere, at least within about 30 miles or so from where I live. Not even the hardware stores. Anyone else noticing this?

                      Tex_77 I believe that Victorinox agreed to supply knifes to Forschner, who changed their name to Swiss Army. Forschner then sold all rights to Victorinox, sole owner now.

                          lkrfletcher Yup, that’s it. They’ve been hard to get as so many other things have been! The chefs knife in that set is amazing!
