    If you ever get the chance use Duck Egg Yolks! You won’t believe what happens with the extra fat and protein of duck.

      calldoctoday and Chef Funny story with Blue Bell, when I lived down in Dallas they had (probably still have) a sports station called the ticket (yup, they do https://www.theticket.com/) and they used to do these ridiculously funny skits. My brother and I would be crying on the drive in and out of work. Well they did one that was a parody of the Blue Bell commercials and it was unreal. Years later I was talking to Corby Davidson and he said they had to get rid of ALL copies of that because they got in so much trouble over it!

      Sorry, totally off topic but I can’t think of Blue Bell without laughing about that story.

        Jonathon It is Ok, being here in Alabama now (we were amused to find they sell Bluebell here & actually have a plant too, immediately after being transferred here) we miss al the Blue Bell Commercials, etc. from Texas. I took the boys with an an assignment up to Brenham one time for a tour of the plant & free ice cream. They liked that, but not sure they do it anymore, especially with all this Corona Business. Of course, we don’t watch much TV anyways, anymore, so who knows what all we are missing!

          @Fat-Bob You are so right about duck eggs. Bakers will all say that the best and riches cakes are made with duck eggs. SO much so that I’m looking into raising ducks just for the eggs.

            Chef That’s just about like me raising rabbits just for the manure. No, that was not a good analogy. Sorry about that. Duck Eggs are RICH!

                Chef To bad your not closer. I have 10 and get 10 eggs every day! Only abut 120 right now. Give them away like crazy. lol

                        Chef and @Fat-Bob we used to raise poultry, including ducks and their eggs went for a premium. Never used them in ice cream, wish I had now thinking about it. But there was a noticable change/improvement in baked goods. I didn’t care for them to much as fried eggs, pretty dense and rich.

                            TexLaw I made a test batch the other day using Monk Fruit Sweetener instead of sugar and it turned out great. The drawback is that it is pretty expensive stuff. I made an “Irish Coffee” ice cream. Standard Coffee Ice Cream recipe with a touch of whiskey! Alcohol is also said to aid in a creamy texture.
