Never used them in ice cream, wish I had now thinking about it. But there was a noticable change/improvement in baked goods. I didn’t care for them to much as fried eggs, pretty dense and rich.

Bakers will all say that the best and riches cakes are made with duck eggs. SO much so that I’m looking into raising ducks just for the eggs.

I took the boys with an an assignment up to Brenham one time for a tour of the plant & free ice cream. They liked that, but not sure they do it anymore, especially with all this Corona Business. Of course, we don’t watch much TV anyways, anymore, so who knows what all we are missing!

My brother and I would be crying on the drive in and out of work. Well they did one that was a parody of the Blue Bell commercials and it was unreal. Years later I was talking to Corby Davidson and he said they had to get rid of ALL copies of that because they got in so much trouble over it!

Sorry, totally off topic but I can’t think of Blue Bell without laughing about that story.

Other than that, I would just about give my left arm for one of those hand cranked churns like when we were kids & everyone begged a chance at the churn. No electronic games for us. I found one at an antique store one time in horrible condition & they wanted a left arm for it, so I did not bite. Back then the motorized one like what we have today would have been considered a luxury, but the hand crank model was built much better.

It was the whole head, feet, and any other trimmings in a big tub along with onion, red bell peppers, garlic, bay leaf, thyme, salt and pepper and cooked down until all the components were tender, including the eyes. If I am remembering correctly, it didn’t smell all that good to me. That was considered a delicacy for them. Ate it on crackers and bread.

We’ve been saving the skin from every butt/shoulder we have had to stock some up and then we are going to start doing some stuff with it.
