Jonathon, one of the little tricks to making this crust come through nice & light & buttery is first smoking the crusts directly on the jerky rack for about 30 min, give or take, under very light Pecan smoke. The other is flipping the crust after the first smoke & brushing a butter Extra Virgin Olive Oil mix on the topping side. The topping side is done face down for the first 30 min & then flipped & made into the up facing topping side. Try it tonight!

calldoctoday I’ve never used cinnamon oil in anything for cooking. I really like a maple frosting for cinnamon rolls I have made in the past, I used the Pioneer Women’s recipe. If it stays cold and rainy I might have to make up a big batch of cinnamon rolls this weekend.

Well Tex, Maple sounds really good & something I would probably like a lot. I will have to try that some day! Pioneer Women’s recipe sounds easier probably. Mine really takes me a long time with basically a triple rise. Once for the original dough, then after rolling & cutting & sitting. Then, if I put them in the refer overnight to be ready for early in the morning with no headaches & making everyone mad for having to wait too long, another rise as they warm up before baking for about 25 minutes. Make some this weekend!

I saw on Texas Tech’s meatlab Facebook page, they are making blueberry sausage. Anybody out in West Texas tried this?

YooperDog Mushrooms are the devil! https://fitnessforthegame.wordpress.com/2014/10/02/the-battle-for-electrolytes/ just replace water with mushrooms and that is how I feel. But let’s be fair, calldoctoday has made numerous pizzas that look amazing and didn’t have mushrooms on them!

Jonathon I grew up with mushrooms were a basic kitchen staple. My wife is not a big fanso I don’t get my fix as often, but still go through about a pound every two weeks. Even without the mushrooms those pizzas look good.

Today was a shrimp and cheesy grits day with pineapple upside down cake for dessert. Prepping a pork shoulder for a birthday dinner on Friday.

The shrimp and cheesy grits didn’t last long enough for a picture. I made two cakes, one remains. Doing a BBQ cook for our youngest birthday tomorrow. Looking like a pork shoulder, pinto beans and creamed corn. Dessert is undecided. I will try to get some pictures.

That Pineapple cake looks really good. I am surprised you have any of that left.
Made a real nice & absolutely delicious Beef Stew in the crock pot yesterday along with Porter Honey Dinner Rolls. I did no0t take any photos this time either as although rolls tasted very good, they looked more like Hallula Rolls. The problem was, I was not trying to make a Hallula Roll, I was trying to make a nice Porter Honey Dinner Roll to complement the Beef Stew with lots of vegetables too.

calldoctoday I needed to save one for a birthday cake. After the pulled pork from the pork shoulder, creamed corn and pinto beans, tne slices became a bit smaller. This is the first time in nine years that I didn’t make beef stew or chili during the winter. I might have to try to squeeze it in before it warms up around here. Sounds like a tasty meal.

Yes, you must make it. You must make both of them. I understand though, as the years have gone by, I seem to make it less than before, but at least once.

Tex, tried your Maple this morning & it beats Cinnamon hands down. Use Maple Extract instead of Lemon & Vanilla on the icing. Only thing I can think of that I messed up is I should have used the maple with butter & sugar for the filling too vs the cinnamon, Cinnamon Extract, & sugar. That would have been some pretty intense Maple. Just in the icing though it was great!. Maybe I should have smoked em with Maple Wood!

If you can get your hands on some maple sugar you might be able to reduce the sugar and replace the cinnamon. It is a bit pricey though.

Tex, I understand that. I am so far behind on this place, not to mention loosing all my energy, that it is embarrassing & humiliating. Canned up some more fresh asparagus & made up a gallon of home fries to freeze. Smoking some burgers & onions & Baked Beans to go with them right now. Will fry up the fries that did not fit into the bag in a bit for the burgers.
I would really like to get my hands on some genuine Maple Sugar. Probably have to do something on line I suppose to find it around here. I could see using that on more than Cinnamon Rolls too.
