Meat Processing Tools

Now that I am trying to make more complicated and precise meat products, I am beginning to realize my meat processing tools are lacking. Time for researching some upgrades. I am talking about measurement devices. I actually on have a digital scale and the one I have is basically crap. Anyone have any favorites of the following:

Digital scale

pH meter
-
compact digital hand held temperature probe?

srg158 For me, a GOOD thermometer is most important. You can always measure spices and such with other ‘‘tools’’ but its hard to measure temp for a done and safe product unless you have a good thermometer.

I use the Redi Check with wired probes. with 2 probes you can monitor meat and smoker temps or use both probes in the meat

Lavatools Javelin Pro Duo is what I use for a hand held temp probe. For leave in probes, I use Fireboard.
As far as scales go, Walton’s is supposed to be getting some new ones in per Austin

srg158 My go to is the Taylor 5in digital pen thermometer (bought it from Walton’s) I use it for everything from sausage to making yogurt…I also have a inkbird ibt-4xp thermometer it has 4 probes and you link it to your phone with a app I like it cause you can set a high and a low temp alarm( bought it off amazon)

Tex_77 We will have new scales… Just been a little crazy here lately, plus I’ve been sick a while, and been out of town this last week. The new scales will be coming soon. I told our new manufacturer that I would have them setup and a order to them this week. They’ll do 0.1 gram increments, which will be amazing for measuring seasonings, but extremely helpful for small quantities while being precise on additives (like sodium erythorbate).

Austin Good deal, I just bought a cheap one to get me by until they come in.

For my vertical sausage stuffer there is always the problem of it moving and sliding around when cranking the handle. I always hear get a C-clamp and clamp it onto the counter well instead of a C-clamp I got on amazon and bought some suctions cups instead and just popped my stuffers peg footing pads out and put these suctions cups in the holes and it wasn’t moving from my counter top anymore.


I just got them in the mail and haven’t used the stuffer yet but I don’t think I’ll have any more stuffer sliding issues any more.
