JPAP I’m new to this page and trying to figure it out. I just ground up about 8 1/2 lbs of pork/beef and letting it cure in the fridge for couple of days and going to smoke some summer sausage w/cheese on the 1st. I’ll post pics when it’s done.

Hey everyone. I’m new to meatgistics my bro told me about it about a month ago. I’m eager to learn and try new meat processing. So far i e done some jerky and summer sausage (stuffed by hand). My girl just got me a Vivo 7lb vertical stuffer and I’m going to use it on the first for some summer sausage with mild cheddar in it. I’ll post some pics. I’m stuffing and smoking on the first.
Just a new one to the meat processing. Want to get into dry curing meats in the future but will see where it goes. So far I’ve done some jerky and Summer sausage. Haven’t gotten brats or snack sticks yet but soon hopefully.
