    @Parksider I feel ya! I tend to get serious with my hobbies. When I started making beer it was 5 gallons at a time because I didn’t realize it’s just as easy and time consuming to make 15. Why bottle beer when you can just go straight to a full size keg? I used to use the kitchenaid to make sausage…it was almost a battle to do a few pounds. Enter a dedicated grinder and stuffer. Faster, easier, more meats!!!

    My wonderful wife made a Costco run today so I could come up with something to compliment the farm fresh corn that was delivered by a Mello Farms family member.     @raypete Jeff Sindelar is awesome and he knows a ton about meat and the science behind it! We’ve actually had him down here to Walton’s a few times to speak at events. Any content you can find from Jeff would be great learning material!

    @rdab I went on a search for the smoker also. I don’t believe that there are any available in North America. This must be a very popular item. No dates to be found when they will be back in stock.

    @Jonathon 10hrs in the smoker, 1.5 hours resting in foil/towel in the cooler. That sauce is actually store bought Sonny’s Sweet. Pictures were taken about 3 minutes apart. It fell apart easy and had great flavor. Used cherry wood in the smoker.

    @Joe-Hell Your ribs look amazing and I actually sprinkled some chorizo seasoning on white fish this weekend! I am sure to no ones surprise it was amazing! I would have posted some pics but A) they were frozen bargain brand so they were extremely thin and B) they were gone before I thought of it! To make up for that here is a pic of the ceviche I had a restaurant make out of my Mackrel and Yellow Tail while on vacation! [image: 1564413011367-ceviche-resized.jpg]

    @PaulGrant Couple other thoughts about the dryness. Did you put them in the smoker with no smoke to dry them out? If yes, they just need to not have moisture on them, then put the smoke to them. If it was overloaded you may have run it too long to dry them all out. I’m still a believer in the water finish, we don’t bag them, just straight into the water!

    @Parksider freezing between stages is a great idea, especially when looking for emulsification. It takes a little longer but it is worth it!

    @Jonathon I tried it for the first time on chicken thighs using the vacuum tumbler. I didn’t do a head to head unfortunately but the thighs turned out great!

    @AaronSilves I just saw that the other day! I’ll drive to the Tri-Cities or Pendleton for a good sale at Cash & Carry. I think it’s now called ‘Smart Food Service’ or something like that. There is rumor we might be getting one in Walla Walla. I sure hope so!
