Jonathon Thanks. I don’t have turkey cure, but will be adding it to my next order. I do have country brown sugar cure and ham spice. I also have bird booster that I could use instead of the ham spice. I’m ok with the ham taste. just looking to get some cure and phosphate in the turkey Thanks again Happy Thanksgiving!

  • Soluble Pa's Black Bull versus PRIME BRISKET INJECTION
    W winter

I did smoke another brisket last week. I used SPGR rub and the BBQ prime brisket injection. it was just as good as the Pa’s but has a more beefy flavor as tex77 mentioned. you cant go wrong using either one.

Thanks for the information. I ended buying both, the Pa’s black bull soluble and the butcher bbq Prime brisket injection . I smoked a brisket with SPGR rub and Pa’s black bull soluble injected. at this point i’m not sure it can be improved on. it is excellent!! now i’m not sure i want to try the prime injection… lol

Has anyone here used both of these? If so was there a clear preference? ? Are they the same with different names?
I have only used SPG rub. thinking of adding one of these to my brisket Thanks

  • Is cold phosphates and sure gel the same thing?
    W winter

Jonathon said in Is cold phosphates and sure gel the same thing?:

Cabelas90 I spoke with our application specialist and he says he wouldn’t add them both. I did both of them when I was making chicken sausage…maybe a side by side comparison is needed, I could always make some more chicken sausage.

in this recipe https://meatgistics.waltonsinc.com/topic/203/how-to-make-homemade-smoked-ham-recipe, in the ham injection both cold phosphate and sure gel are in the recipe. has that changed? should i not include the sure gel? Thanks

  • Ham Cure question
    W winter

The ham has a cover pickle. plus injection. this is excess. My smoker will only hold one ham or i would do both now. I plan on smoking the first tomorrow morning. What if I inject and cover the second ham now but don’t smoke it for two days instead of overnight? Thanks

  • Ham Cure question
    W winter

    Hi
first time curing a ham. I’m using the country brown sugar cure with all the additives recommended in the Waltons recipe. I have 1 gallon of the cure solution left after injecting and covering the ham. this is the full strength not the 50% solution. How long would this be still usable on another ham before it looses its cure properties? I plan on doing another ham in 2 days. Thanks
