    I keep a steel on the end of my apron chain, and use it regularly. That does look like something my son might like, as he dislikes pulling his blade down the steel towards his knuckles.

    Nice machines! I hear you on the too cold bit, I don’t spend any more time outside than necessary right now.

    I can watch a shaper cut for hours. That’s good, since it takes hour to get anything done! But, when a shaper is the right tool, nothing else will get it done at the same cost and especially with the minimal tooling it needs.

    OK, the hams look well on their way to delicious, but I spotted the shaper in the background of your third photo, and was wondering if you butcher in your machine shop? I would kill to get my hands on a shaper for my shop, I run into the need to make custom splines from time to time, and you cant beat a nice little Atlas or South Bend benchtop shaper for that!

    Thanks! I find I am an “out the window” flyer, rather than a “fly the dials” guy. Hopefully, I can get through PP and instrument and still enjoy flying!

    marzig20 a great introduction to canning meat is to grab cheap chicken thighs sections for 49 cents and make stock. If you can safely can stock you can make anything cuz that stuff is literally the same thing that biologists use to grow bacteria samples!

    Garry Tarpley Presto makes a version of the 23 quart that has a stainless plate embedded in it for induction cooktops. I think Mirro make a stainless canner, but not sure.

    GWG8541 You won’t regret it! I recommend canning it in pints, rather than quarts. No safety or quality issues with quarts, just most recipes call for two cups at a time.

    marzig20 Hot pack or cold pack isn’t going to matter much with pressure canning, it WILL get hot all the way through! I would use a broth to fill the gaps in the jar either way, since air bubbles are a total no-go for canning.
