Water is usually around 2 quarts for 25 pounds of meat. So around 2.6 ounces per pound of meat. ( 13 ounces of water to 5 pounds of meat.)

@Luebke1219 It is possible but they all come from the same “source” pig intestines. Those may have been harvested on older hogs is the only thing I can think of? If you want the best hog casings then the ubed variety are hand-picked to be used for tubes. They are more expensive but they cut down on processing time and are generally better overall.

THanks , yes the meat was in the fridge overnight . and that is what i did i put into large casings.

Oh, and then stay at lowest temp for an hour. If that is 170 you might run into case hardening really fast so finishing in water (2nd link above) could be a life saver for you.
