    Does anyone know if it ok to stack pork bellies on top of each other when using the dry rub cure in a meat lug to save on room in the fridge?

      circlestaxidermy absolutely. That is exactly how it is described to be done in Marianski’s book. He says fat side down, then the top one fat side up. Go through and rotate them daily.

        circlestaxidermy Yep. Always go fat to fat and lean to lean. I’ve never had a problem in my limited experience.

            Yes, fat to fat side, lean to lean and rotate daily… then rinse, rinse, and rinse some more… fry up a piece, and rinse more if necessary… smoke away…
