The other night was my first time stuffing 22mm sheep casings with the 11# Walton’s stuffer and between cranking and feeding the casings by myself I found it considerably easier to sit down and pull down on the handle from 12 o’clock to the 6 o’clock position and then move the handle back up to 12 o’clock and start over. It allowed me to pull straight down which seemed to give me more power and control to avoid blowouts, that’s my very limited experience and two cents worth.

twilliams Are you saying you used a 12.7mm o.d. and stuffed with a larger stuffer canister diameter?
@dennyo yes my old cabelas 20 lb canister is quite a bit bigger with the 12.7mm horn that came with it. I will do some measurement comparison tonight when i get home.

twilliams Your Waltons stiffer looks a lot like my LEM 11# 2 speed. The horn on the Cabellar seems to be working a lot of reduction! I suppose there is no chance that you could switch the horns?? (I know, you have already tried that too, duh.
All of you talk about a clicking noise, Why would that be a normal sound??

Tried finding the meat hacks post but couldn’t find it. I think it was Dr_Pain that came up with the therapy balls to squeeze the rest of the meat out of the throat of the stuffer which is a wonderful way to do it. Here is my hack that I do.
I used to buy all cabelas equipment before I found meatgistics and Walton’s. The pic you see which is Saturday the 8th and is my very first time using the 11lb sausage stuffer from Walton’s. My hack is to take my long tube jerky shooter and add the left over meat from the stuffer throat and into the tube, then take the stuffing horn from the Walton’s stuffer and finish out the casing. There is a little left in the horn and I will find some type of plunger to get that out at a later date.twilliams there is a different company out there that sells these. They come in a few different sizes. A metal plunger to clear out the tube and then a brush for cleaning. Thought about trying them instead of using a wooden spoon handle (mine are actually plastic) I even thought about buying a couple different size dowel rods to try.

Randie N I like the dowel rod idea. Right now, I’m doubling plastic wrap over the end of the next smaller stuffing tube and using that as a plunger. It works but add another tube to clean.

@dennyo I’m doing another 25 lbs today so I will be doing a test. The first flavor I will use the Walton’s horn the second flavor will be using the cabelas horn with the Walton’s stuffer. I will post results

@dennyo well after the test there is absolutely no difference in crank pressure from the Walton’s horn to the cabelas horn. I was surprised. On a positive note the crank pressure was so much less today, really baffles me because I used 100ml less of water on this batch compared to last weekends batch.

Dang, wish you were closer, I’d let you play with my LEM 2 speed. I have yet to say that it cranks hard. I’m not advocating LEM now mind you, I’m thinking that your new 11# Waltons and My 11# Lem I’ll bet are very simularly built. This still makes me thing there is an issue with your stuffer.

@dennyo no I haven’t contacted them and I won’t. I’m not unhappy with the stuffer, it is just not what I was expecting compared to my other one. It does make me interested now to know how the 20lb Walton’s cranks compared to my 20lb Cabelas. I would prefer a bigger canister so I don’t have to refill. I’m not buying another one though, my next purchases are gonna be a vac tumbler, vac chamber, commercial dehydrator and 15”slicer.

GWG8541 I stepped down to the 11 lb just for the wife as she is the one that cranks while I manage the stuff. With comments being that the crank was easier since the diameter was smaller I chose to get it for that purpose. That is not the case, she had a harder time cranking more than my 20lb. I ended up doing it while I put pressure on casing to fill and she just held it up to get the length I wanted as I stuffed. As far as 11lb goes that is not accurate either. I made two 11lb batches. I only got approximately 8 lbs in and had to refill. The cylinder appears to be thin walled and not as robust. The gears and shaft appear to be very nicely built, not sure what the clicking of every notch in the gear was all about. I thought is was a locking mechanism so it would not back travel but that was not the case. The horn for the 19mm is better than my other one. Maybe I will do a pros and cons list tomorrow

@DennyO is it where I said the horn appears to be better than my other one? That was not in reference to crank pressure, it is a smaller diameter so the 19mm casings just slide right over the horn. With my cabelas one I have to cut the full length casings in thirds and physically force the casings on. Not terrible by any means but annoying. However, after using them both yesterday for the test I’m not sure which one I like better, they both have their annoyance. The cabelas you have to force the casing on but the meat doesn’t back travel between the horn and casing. The Walton’s horn is smaller outside diameter so the casing slips right over, however that allows the casing sleeve to slide around and allow meat to back travel. Again not terrible just annoying. As I said yesterday both horns showed no difference in crank pressure

Did your batch have cure in it?
I’ve always stuffed directly after mixing then let it set in the fridge overnight. I’ve come to understand that after mixing it needs to be stuffed and waiting is nearly impossible, just what I’ve read.
