    As we enter the Long Weekend of Labor Day, we, as Americans are celebrating nearly 150 years of The American Workers. We have built the strongest workforce of our globe, and we have much to be proud of.

    Now, while I’m tempted to celebrate the end of the Hot Days of Summer, (especially here in Texas) It is the drive of American workers that has made our country GREAT.

    A special thanks to all of our military that made this possible. A tribute to our Law Enforcement that protects us. There is a reason that the world did see America as the Land of Opportunity. May this continue as long as the great people of America value just how special this is.

    God Bless America!

              PapaSop Okay, I’ll start some c r a p . If you are not 100% for this, then you might consider moving to some place that is better. Not sure just where that would be, but I’ll allow for anyplace that is better than America.

              Just let us all know where that is. We would all likely move there.

                Chef. This could not have been said better. Hoping to just get time to do some Gumbo I am prepared for. May have to start it this evening though, unfortunately as we have an inspection scheduled locally for Sat morning & have to hit the road toward the end for a few inspections in Mississippi & Louisiana. Wishing the best for everyone. Stay cool, stay dry (no, not that dry necessarily), & have fun. Thank each & every one of you for everything that you have done.

                calldoctoday I’m planning on making some gumbo this weekend as well. Thinking chicken, sausage, and shrimp.

                What kind are you making?

                  PapaSop Okay, I’ll start some c r a p . If you are not 100% for this, then you might consider moving to some place that is better. Not sure just where that would be, but I’ll allow for anyplace that is better than America.

                      I want to give a huge shout out to the farmers. They don’t get holidays off. They don’t get sick days. They don’t get vacations. 24 hours a day 365. I did this profession for 10 years. They give the ultimate sacrifice!!

                          20 years on the family dairy farm.
                          When I started working 8 hr. shifts getting paid by the hour and weekends off I thought man, this is great!

                              don’t feel bad, I’m working all weekend also. 4-12 hour midnights starting tonight. It’s going to be tough after 2 1/2 weeks off on vacation. Stay safe at work

                                  Chef Well, I started out just going to do my Middle of the Winter Gumbo in what feels like the middle of the Summer. However, Margaret really wanted some seafood in it. The problem is two fold though, first finding wild, preferably domestic seafood, the second problem is affording it. I finally found some wild Gulf shrimp & crabs I could find a way to afford along with some wild Louisiana Crawdads, & at least some wild oysters to add to the mix “Gumbo”. Of course I am also one of those that believe Gumbo does not exist without Okra, which was the reason for the need to make Gumbo to start with. I know you will enjoy yours. Dave

                                        kyle I just started a 4 day run. Mine are 12 hrs.but at least it’s days. I go back on nights Tuesday. 🌙. This community gets me through a lot of long nights.

                                          cdavis kyle, You guys don’t work too hard now. We will be right there with you with an inspection in the morning before a day or two of report writing (while trying to make Gumbo at the same time) & then hit the road for Natchez, MS, Port Allen & Opelousas, LA for a few more inspections before heading back to write reports.
