Jerky or Snack Stick seasoning

Can you use jerky seasoning in snack sticks and vice versa?

Sdickey1960 Yes and no. I’ve covered this a ton recently for some reason. So, snack stick to summer is 100% fine and never going to give any major problems. Jerky to Snack stick or summer CAN cause issues. If you look at our Jalapeno Snack Stick it weighs 1.5 lb and does 25 lb of meat. Our Jalapeno Jerky weighs 0.625 of a lb and does 25 lb too, so it is half of the snack stick. This is because it is formulated as a topical so it needs less. If you used the jalapeno jerky to make a snack stick you would be disappointed in the outcome. However, you can’t just say, if you are using a jerky seasoning to make a snack stick use twice the amount of seasoning because they arent always at that ratio.
Basically, if the jerky seasoning is a very small bag I would avoid doing it, and if you do it start with small batches until you figure out the ratio. Hope it helped!

i actually called Excaliber today on this subject… well for Jerky to Stuffed sausage, his take on it was since jerky starts out at 25# mix for meat… then you dry out 50% the seasoning is twice as noticable… I am going to try the Sweet Chipotle Jerky in 5# ground sausage and stuff it… ( will reduce via the conversion chart) gotta try it …

Jonathon he said use it at the normal ratio 1 bag to 25# meat… his statement was that at the 1 bag to 25# meat when you dehydrate to ~ 50% down to 12.5# meat the flavor intensifies… so maybe for sausage I would need to double up… I’ll see this weekend… grinding and stuffing 400# or so

Blue Captain Jonathan, what’s the relationship between whole meat jerky and ground jerky using the same jerky spice such as Colorado Jerky mix? I’ve been taking the spice recommendations times 1.2 when putting it into ground meat. Thanks. Dewey

deweymeats No worries, this is exactly what we were talking about on this. I am asking our commercial sales people what their commercial customers do here. I’ve only ever made Dill Pickle and Pizza ground and formed jerky and those both are snack and jerky seasonings, so they are formulated either as a topical or to be mixed into the center of the meat.
