    Chef I am pretty sure they are not Halal, surprisingly I do have a halal certification for our natural casings though.

        Chef It’s gotta be the beef and lamb casings but as I am reading this I am seeing this isn’t to be sent to customers with purchases. Ill still post it here but this ISN’T valid as it has expired. Let us know a specific beef size (pork obviously no good for Halal) and i will see what I can get

            Jonathon Got it, thanks. Would like something for a regular size sausage like a 32 - 35 but I’ve never seen that size in beef.

              Yeah, that doesnt exist as far as I am aware…though they must harvest them from veal…no?

                        Chef the largest sheep are 26-28mm. I talked with my old boss here and he thought that there are some collagen that are Halal certified so I am looking again as that would be a better option. I am also trying to find out if anyone is harvetsing veal intestines and if not why not? He thought it might have something to do with beef small intestines being more of a high-risk material but don’t quote me on that part yet. I’ll update as I can

                          Jonathon I appreciate your research on this. I’m checking around and there just may be a specialty market for Halal sausage here in Houston. I would be the only source as far as I can tell. Looking forward to what you find out. Thanks again for all your support.

                            Chef Okay, so I talked to the head of commercial sales who has more knowledge on these types of things than probably anyone I know. He said they aren’t harvested for a few reasons (that are sort of connected), 1 the viral load is pretty high and would require special handling/testing for CWD and 2 the volume just wouldn’t be enough for it to be worth it and 3 the sizes these would provide are already well covered by sheep/beef/collagen.,

                              Jonathon Thanks going to ask the customer if the sheep 22 to 28 would be okay given the restrictions. Otherwise I’ll have to go without a casing.

                                Chef that would be your best bet or go with the cellulose casings that would peel off. 26mm is the single strands https://www.waltonsinc.com/26mm-cellulose-hot-dog-casings
