    Had some landjaeger seasoning laying around and was only able to round up about 4 lbs of pork butt yesterday so I decided to give it a go. In the smoker now - hopefully the family likes it! Was going to use natural hog casings but I got lazy and opted to use 21mm collagen casings and really flatten them out.

          Turned out pretty good - wouldn’t flatten em out quite as much next time. I agree that the ECA makes them a little extra tangy - I’ll try smoked meat stabilizer next time.

            tjbloom We had the same issue trying to flatten em out. I really liked this flavor though, I am going to do it again just to have it. I wonder what it would be like with pheasant? That sounds like a pretty good Gamebird Gourmet…
