What did everyone cook today?

ND Mike I like to use Sugar Maple, Pecan, Apple, Cherry or Alder. I like them all and haven’t had any complaints yet and I’ve been smoking cheese for about 12 years. I have a Traeger Pellet Smoker w/cold smoker so what ever bag of pellets goes in the hopper is what it gets smoked with. My favs are the Maple, Pecan & Alder.

johnsbrewhouse I can’t wait to get smoking my cheese. Here’s my cheese inventory for this year. Kroger had 2lb. blocks for $3.79 last week and a couple of weeks ago 8oz. for $1.49. I use Tillamook, COSTCO’s Jarlsberg and SAM’S Club Muenster. Just waiting for some cool cloudy days to start smoking. I have to give up my garage beer fridge for my cheese every fall. Cool rainy day here. We had a roasted chicken for supper last night that the wife made. I decided to make chicken noodle soup the only way I know how. From scratch and a boiled carcass. I did add store bought gluten free egg noodles. Hit the spot on this wet dreary windy day. Eastern part of the state has a tornado warning and the western part of the state is getting snow.

Bob Stehlik $12.99 for my five pound loaf at US Foods/Chiefs Store, it’s closer than Costco. Fred Meyer/Kroger up here doesn’t send me ads anymore so I never know what’s on sale. The last batch I got from Safeway on sale for Lucerne

Anyone ever use shagbark hickory husks in your smoker?
Ridley Acres No, other than the wood, just the nuts (some with the husks, which can be too strong & others without). Makes for a stronger, more intense flavor.

Bob Stehlik Wow, what an assortment. You’re going to have cheese for every occasion. How long do you smoke yours?
wdaly I usually cut a 2/2.5 block into 3 equal pieces and leave the 8 oz. pieces whole. I smoke for 10/15 minutes per side depending on the hardness of the type of cheese. It is about an hour per piece depending on temperature. We like a heavier smoke so after an hour I put in the fridge while another batch is smoking and then repeat. Many recipes call for a total of 15/30 minutes of smoke but we have found people prefer a heavier smoke. I also smoke my cheese with a pan of ice cubes to help keep the cheese cooler.

Mine smokes for around 4 to 5 hours cold. I like a heavy smoke flavor and some color too. I have found the cherry pellets much more pleasant tasting than the mesquite. The mesquite smoke was a bit harsh at first, but may mellow with time in the package. The A-maze-n tray in the hot side of the Trager and cheese in the cold chamber really has made a difference.

johnsbrewhouse I think the Pecan, Cherry, or Apple works best. The Mesquite is too heavy & better for something much heavier like beef, etc.

ND Mike Nothing better than homemade chicken noodle soup on a blustery day, unless you add a grilled cheese with it. My wife makes homemade noodles for ours, have some soup in the fridge right now.

bocephus I am glad it is soup season. I make it a lot during the winter. That is cool that you guys make your own noodles!!!

ND Mike I used to not care for chicken noodle soup growing up is as you know some boil the chicken and think it’s great. But once when someone discovered nothing less than a rotisserie chicken needs to be used the moons aligned.
